Chickumus

Tonight Ed planned to make curried chicken.....then he realized we have no curry and no coconut.  It is nearing the end of the month and the budget has been spent, so he improvised, which is neither unusual or scary.  His creations usually end up pretty good and this one was a hit with us and the kids.

Ingredients
1 bell pepper
1 lg onion
1 T of bacon grease
Herbs
3 lg chicken breasts
1/2 c. chicken stock
salt
pepper
5 cloves garlic
1 can garbanzo beans
lemon juice
olive oil
1/4 c. cream
10-12 cherry tomatoes


1. Saute thinly sliced pepper and onion in bacon grease on medium heat in a sauce pan.

2. After a few minutes, toss in herbs of liking,  chicken, chicken stock, salt, pepper, 3 cloves of garlic pressed.

3. Cover and simmer.

While the chicken simmers, make sauce in food processor.

4. To food processor add, garbanzo beans (drained with some liquid reserved), this reserved liquid, lemon juice, 2 gloves of garlic pressed, salt, and pepper.

5. Turn on food processor.  While running drizzle in olive oil until desired consistency (should be like a thin humus).  Taste......adjust if needed.  (Then add 1/4 c. cream - yum!)  Set aside.

6. When chicken is done (you'll just have to check, Ed didn't time it), remove breasts from pan, cut into bite sized pieces.

7. Remove herb stems, add chicken, sauce and cherry tomatoes (sliced in half).  Stir and simmer until sauce thickens.  (approx. 15 minutes)

8. Season if needed.  Serve and devour!
